3D Packaging Prototype

I was trying out Strata3D's Enfold Software to design and make 3d mock up of boxes and I was wondering if the same thing can be achieved using blender ( albeit not integrated ).

I was thinking :

Design the box outline using Illustrator or CAD
Design artwork and export it as a JPG file.
Import both the outline and the JPG in Blender to get the 3D box.

If it is possible, would it also be possible to make the box "foldable"?

If the "outline" is just the basic shape of the box, you would be able to do that entirely within Blender, just by modelling your design and applying the artwork to it as a texture. You should also be able to make it foldable inside Blender as well.

Thanks will give it a try.

Would the dimensions of the image file be preserved or do I need to do some sort of resizing

You shouldn't need to resize your image, because Blender can scale it automatically.
