so how many monitiors can you have running on one computer? does it relie on how many graphics cards you have?

It does somewhat rely on how many graphics cards you have, depending on what you want to do on multiple monitors. To play games on multiple monitors, you usually need 1 card for 2 monitors, and 2 cards for 3 monitors. If you don't want to play games, there are many options for multiple monitors. The largest number of monitors I have heard of being hooked up to one computer is 16, although I'm sure a larger amount is possible.

i was thinking 3 or 4, for simplicity in blender, could i have my screens split 4 ways across the 4 monitors, and be able to play games with it also ( not at the same time)

You could play games with 3 monitors, but you'd need 2 or 3 cards. I don't know about 4 monitors for games, I don't think that would work.

sometimes i have used 3 monitors in a computer and use 3 graphics card. if i want i could use 2 graphics card,but 3 graphics card is better for playing games.
